Peanut Butter Madness
I promise, I didn't plan on posting so many peanut butter recipes this month. I think the thoughts I had while posting the Peanut Butter Oatmeal Chocolate Chip Cookies recipe at the beginning of the month really went to work on my subconscious mind. Boy was that a mouthful. The result, my month long obsession with peanut butter. I really do love that thick, smooth, and nutty spread that sometimes sticks to the roof of my mouth.
Here's a simple dessert with that magical combination of chocolate and peanut butter. Add a bit of cookies and cream sprinkles for the perfect extra little crunch and pizzazz. And since it's a finger food it'd be great to enjoy as a party snack or while watching the Superbowl. I'm keeping this recipe semi-homemade. Not even sure this should even qualify as a recipe actually.
When planning food for a party there are some foods that I like to cheat or take shortcuts on and not make from scratch. As long as I know I'm not sacrificing on flavor and I end up with a bunch of happy snackers I feel totally justified in doing so. Wouldn't you?
Keep it Simple
Just mix your favorite boxed chocolate cake mix or even brownie mix according to the box instructions. Or, what the heck, you can even go crazy and prepare your favorite cake or brownie mix from scratch. No one's stopping you or even judging you, you over achiever. Bake cake balls using a cake pop maker or cake ball pan. Make sure to fill those cavities to the top. Allow your balls to completely cool. Then dip in our special peanut butter sauce below using a fork. Gently tap fork to remove excess sauce and set aside. Sprinkle on some cookies and cream sprinkles before the peanut butter coating dries and voila, as soon as it dries your chocolate balls of peanut butter yumminess are ready for game time.

To make chocolate peanut butter sauce, just melt together 1 bag of white chocolate candy melts and 1/4 C of peanut butter in a double boiler and stir until smooth. Remove from heat for dipping.
